A Joy, a renowned fine-dining buffet in Taipei, has partnered with renowned Chef André Chiang to introduce a new autumn menu, continuing the restaurant's annual theme of a "Gastronomic Symphony of Taiwan's Four Seasons." Chef André, known for his culinary journey across the globe, has reimagined the dining experience by focusing on the theme of "Land," representing warmth and connection to home.

The autumn menu, which runs from September 10 to November 30, invites diners to explore the flavors of Taiwan through a series of dishes that blend local traditions with international techniques. Chef André’s approach is rooted in the craft of fire, employing eight distinct cooking techniques to transform ingredients into memorable dishes. These methods include pan-frying, boiling, stir-frying, deep-frying, searing, grilling, baking, and griddling, each one contributing to a rich and layered autumn feast.

One standout dish is the "Big Flatbread Wrapped in Small Crispy Cake," a nostalgic treat that Chef André reimagined with a modern twist. The flatbread, reminiscent of his childhood in Shilin, Taipei, is now encased in a chewy, Japanese-inspired tortilla, filled with a mix of ingredients that include shredded cabbage, chervil, and autumn-plump Tiger prawns. This dish, finished with truffle mayonnaise, mentaiko, grated daikon, and scallion-ginger oil, encapsulates the essence of Chef André’s culinary journey.

Another highlight of the menu is the "Silkie Chicken Soup with Sichuan Pepper & Pickled Chili." This dish pays homage to Chef André's mother’s cooking, a source of comfort and warmth during his travels. The soup, made with a slow-cooked base from an old hen, incorporates pickled chili, tengjiao, and Sichuan pepper, creating a unique blend of flavors that evoke memories of home. The dish is a testament to Chef André's ability to blend traditional Chinese techniques with his global experiences.

The menu’s pièce de résistance, the "Bouillabaisse with Genmai Monaka," combines Southern French and Japanese culinary traditions. This dish features a rich Bouillabaisse broth, made from red seabream, sword prawn, white wine, tomato, and saffron, paired with a monaka wafer that is both familiar and innovative. The monaka wafer, filled with wild sea bass, king crab meat, and kelp sushi rice, is complemented by white shrimp, saffron cream, roasted green rice grains, and dill, creating a harmonious blend of flavors that transport diners to a culinary journey through time.
